Make the strawberry syrup

In a small saucepan over medium-high heat, combine the quartered strawberries, sugar and 2 cups of water. Bring the mixture to a boil, then reduce the heat and let it simmer until the strawberries are very soft and the liquid is syrupy, about 15 minutes. Stir occasionally and mash the strawberries with a wooden spoon or a potato masher to release their juices.

Strain the strawberry syrup

Place a fine-mesh sieve over a large bowl or a pitcher and pour the strawberry syrup through it. Press on the solids with a spatula or a spoon to extract as much liquid as possible. Discard the solids or save them for another use (such as topping for yogurt or ice cream). You should have about 2 cups of strawberry syrup.
