Brine and pound the chicken

To make the brine, dissolve 1/4 cup of salt and 2 tablespoons of sugar in 4 cups of warm water in a large bowl. Drain and pat them dry with paper towels. Then, using a meat mallet or rolling pin, pound each chicken breast to 0.8-inch | 2cm at the thickest part. Make sure your fillets are all the same thickness to ensure even cooking.

Preheat the oven and prepare the chicken
