To make the brine, dissolve 1/4 cup of salt and 2 tablespoons of sugar in 4 cups of warm water in a large bowl. You can also add some herbs or spices to the brine for extra flavor, such as bay leaves, peppercorns, rosemary or thyme. Add the chicken breasts to the brine and refrigerate for 15 to 30 minutes.
