I’m always looking for new and easy recipes to make for my family. Especially ones that don’t require a lot of time or effort. That’s why I was so excited when I found this Instant Pot Chicken and Rice recipe. It sounded simple and yummy. And it was! Here is how I made it and why you should make it too!
What You Need for Instant Pot Chicken and Rice recipe
The first step was to gather the ingredients. They were all basic and affordable. I already had most of them in my kitchen. I just needed to buy some chicken breasts, rice and parsley. The rest of the ingredients were oil, salt, pepper, onion, garlic, thyme, rosemary and chicken broth. Nothing fancy or complicated here.
How You Make Instant Pot Chicken and Rice recipe
The second step was to prepare the chicken and the onion. I cut the chicken breasts into smaller pieces and seasoned them with salt and pepper. I chopped the onion and minced the garlic. This took me about 10 minutes. Not too bad.
The third step was to cook everything in the Instant Pot. This was the easiest part. I just heated some oil in the pot using the sauté function. Then I added the onion and garlic and cooked them for a few minutes until soft and fragrant. Next is the rice and broth and stirred well to combine. Then I placed the chicken pieces on top of the rice and locked the lid. I set the timer for 10 minutes on high pressure and waited for the pot to do its work.
The fourth step was to release the pressure and finish the dish. After 10 minutes of pressure cooking, I let the pot release the pressure naturally for another 10 minutes. Then I opened the lid and fluffed the rice with a fork. It looked and smelled amazing. The chicken was cooked through and moist. The rice was tender and creamy. The herbs added a nice touch of flavor and color. I stirred in some butter and parsley to make it even more delicious.
How You Enjoy It
The fifth step was to enjoy the dish with my family. We all loved it! It was a hearty and satisfying meal that we devoured in no time. Perfect for a busy weeknight or a cozy weekend. It was also great for leftovers. We had some for lunch the next day and it tasted just as good.

Sauté the onion and garlicNext, you will sauté the onion and garlic in the same pot, using the leftover oil. This will create a flavorful base for the rice and broth. To do this, heat the oil in the pot using the sauté function. Then, add the onion to the pot and cook for about 3 minutes, stirring occasionally, until soft and translucent. Then, add the garlic, thyme and rosemary and cook for another 2 minutes, stirring frequently, until fragrant. |

Add the rice and brothNow, you will add the rice and broth to the pot and deglaze the bottom with a wooden spoon. This will help to loosen any browned bits that are stuck to the pot and incorporate them into the liquid. To do this, add the rice and broth to the pot and stir well to combine. Make sure that all the rice grains are submerged in the liquid. Then, place the chicken pieces on top of the rice in an even layer. |

Pressure cookThe final step is to pressure cook everything together until the rice is tender and the chicken is cooked through. This will take about 10 minutes on high pressure, plus some time for the pot to come to pressure and release pressure naturally. To do this, lock the lid on the pot and make sure that the valve is set to sealing. Then, select manual or pressure cook mode and set the timer for 10 minutes on high pressure. When the time is up, let the pressure release naturally for 10 minutes, then turn the valve to venting to release any remaining pressure. Carefully open the lid and fluff the rice with a fork. To finish, stir in the butter and parsley and season with more salt and pepper if needed. Enjoy your Instant Pot Chicken and Rice with a green salad or your favorite vegetable side dish. |
