One weekend morning, I woke up feeling particularly hungry and ready for a hearty breakfast. However, I was getting tired of my usual scrambled eggs and toast routine. As I was scrolling through social media, I came across a recipe for a customized folded eggs omelette that caught my eye.

I had never made an omelette quite like this before, and I was excited to try it out. So I gathered all the ingredients and began whisking the eggs together with some milk, salt, and pepper. I decided to go with the Ham and Cheese filling, and I diced up some ham and shredded some cheese.

As I cooked the eggs in a non-stick skillet with some butter. I added the filling to one side of the eggs. Then, I carefully folded the other side over the filling. Let it cook for a few more minutes until the eggs were set. I slid the omelette onto a plate and garnished it with some chopped scallions.

Whisk the eggs

In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.

Cook the eggs and filling

Heat a non-stick skillet over medium heat. Add 1 tablespoon of butter and swirl to coat the pan. Pour 1/4 of the egg mixture into the skillet and let cook undisturbed for about 30 seconds. Add 1/4 of your choice of filling to one side of the eggs. Fold the other side over the filling and let cook for an additional 1-2 minutes or until the eggs are set. Repeat this process with the remaining egg mixture and filling.

Plate the omelette

Carefully slide each omelette onto a plate and garnish with chopped herbs or green onions if desired.
