Boil the potatoes

Bring a large pot of water to a boil and add 1 tablespoon of salt. Wash and scrub the potatoes and add them to the boiling water. Cook until they are fork-tender, about 15 to 20 minutes depending on their size. Drain and let them cool slightly.

Smash the potatoes

Preheat the oven to 200°C/390°F (180°C fan) and brush a large baking sheet with 2 tablespoons of olive oil. Place the potatoes on the prepared baking sheet and use a potato masher or a fork to gently smash them until they are about 1/2 inch thick. Leave some space between them.

Season and bake the potatoes

Drizzle the remaining 2 tablespoons of olive oil over the smashed potatoes. Sprinkle the garlic powder, onion powder and some salt and pepper over them. Bake until they are crispy and golden on the edges, about 25 to 30 minutes.
