I woke up this morning feeling the need to do something different in the kitchen. So, I decided to make banana oat muffins. This is a recipe I discovered on Instagram, and I was excited to try it out.

I quickly gathered all the ingredients I needed – oats, flour, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, bananas, unsweetened almond milk, vegetable oil, and vanilla extract. I preheated the oven to 375°F and lined a muffin tin with paper liners… Then started mixing the dry ingredients in a large bowl, making sure they were all well combined.

Next, I mixed the wet ingredients in a separate bowl, mashing the ripe bananas and mixing them with the almond milk, vegetable oil, and vanilla extract. I slowly poured the wet ingredients into the dry ingredients and mixed until the batter was just combined. I was careful not to overmix, as I had read on Instagram that this could make the muffins tough

Then scooped the batter into the muffin tin, filling each cup about 2/3 full. After that, I put the muffins in the oven and set the timer for 18 minutes.  And I couldn’t wait to see how they turned out!

The First Bite:

As the muffins were baked, the delicious aroma filled the house, making my mouth water. Finally, the timer went off, and I pulled the muffins out of the oven. They looked perfect, with a golden-brown colour and a bit of texture from the oats. I let them cool for a few minutes before taking my first bite. The taste was amazing – sweet and moist with just the right amount of cinnamon and nutmeg. The texture was perfect too, with a slight crunch from the oats.

I couldn’t keep the deliciousness to myself, so I decided to share some of the banana oat muffins with my friends. I packaged them up in cute little boxes and drove over to their houses, leaving the muffins on their front porches as a surprise. Their reactions when they found the muffins were priceless, and they all loved the taste.

Making banana oat muffins was definitely worth it. They were easy to make, and the taste was incredible. I am already thinking about making them again, maybe experimenting with different mix-ins like chocolate chips or raisins. This recipe is a keeper, and I am so glad I discovered it on Instagram.

Preparing the Dry Ingredients

Preheat the oven to 375°F. Line a muffin tin with paper liners. Scoop the batter into the muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool for a few minutes before serving.
